白色顆?;蚍勰腥樗岚l(fā)酵的味道,微有風(fēng)化性。乳酸鈣能溶于水,易溶于熱水(5%左右),不溶于乙醇等無機溶劑。強化飲料時易于獲得穩(wěn)定、澄清的溶液,水溶液PH為6.0~7.0,溶解后風(fēng)味平和;
乳酸鈣主要用于食品添加劑,補充人體缺鈣,面包、糕點等緩沖劑、膨松劑,補鈣劑。也常用作]營養(yǎng)增補劑、酸度調(diào)節(jié)劑、抗氧化劑、乳化劑、穩(wěn)定劑和凝固劑、增稠劑等。
