硫酸軟骨素是從鯊魚軟骨中提取制備的酸性粘多糖，主要是硫酸軟骨素A。
硫酸軟骨素廣泛存在于動物的軟骨組織中，在骨腱、韌帶、皮膚、角膜等組織中也有。
在軟骨中，硫酸軟骨素與蛋白質結合成蛋白多糖，并與膠原蛋白結合在一起。
硫酸軟骨素納為白色或類白色的粉末，有引濕性，水中易溶，丙酮和96%乙醇中幾乎不溶。

In cartilage, chondroitin sulfate binds proteins to proteoglycan and it binds to collagen. Chondroitin sulfate sodium is white powder and water soluble.
Functions: Chondroitin sulfate is a sulfated glycosaminoglycan (GAG) composed of a chain of alternating sugars (N-acetylgalactosamine and glucuronic acid). It is usually found attached to proteins as part of a proteoglycan. A chondroitin chain can have over 100 individual sugars, each of which can be sulfated in variable positions and quantities. Chondroitin sulfate is an important structural component of cartilage and provides much of its resistance to compression. Along with glucosamine, chondroitin sulfate has become a widely used dietary supplement for treatment of osteoarthritis.
