別名：大茴香油
本品為無(wú)色或淡黃色的澄清液體；氣味與八角茴香類(lèi)似。冷時(shí)常發(fā)生渾濁或析出結(jié)晶，加溫后又澄清。
1.主要成分
反式茴香腦（80%~95%），蒎烯，對(duì)甲氧基苯乙酮，水芹烯，對(duì)異丙基甲苯，甲基蔞葉酚，l-檸檬烯，異松油烯，1,8-萜二醇，大茴香醛（約7%），大茴香酮，茴香酸，l-芳樟醇，a-松油醇等。貯久后茴香腦含量下降，甲基蔞葉酚增加。
2.制法
由木蘭科植物八角茴香的新鮮枝葉或成熟果實(shí)粉碎后經(jīng)水蒸氣蒸餾而得。得率8.5%~9%（干果）或1.8%~5%（鮮品）。

4.用途
規(guī)定為允許使用的食用香料。芳香調(diào)味藥及健胃藥。
主要用于焙烤食品，糖果，酒類(lèi)，碳酸飲料及煙草等，亦為提制食用茴香腦和大茴香醛的原料。
