Beschreibung
Kelp consists of dehydrated seaweed obtained from the class
Phaeophyceae (brown algae). The major commercial species are
Macrocystis pyrifera, Laminaria digitata, Laminaria saccharina
and Laminaria cloustoni, although other species have been used.
Macrocystis pyrifera is harvested from extensive beds in the
Pacific Ocean off the coast of southern California by means of
large, ocean-going vessels with mechanical cutting and loading
equipment. The giant kelp is a perennial, which lives eight to ten
years. The mature stipes range in length from 50 to 200 ft. It grows
in water 25 to 80 ft. deep in areas having a rocky bottom and
strong currents and is attached to the ocean floor by a hold-fast or
root-like structure. Laminaria species are prevalent off the coasts
of Maine and Nova Scotia. These species range from 5 to 15 ft.
in length. The entire plant, minus the roots, is used. The seaweed may be chopped to provide coarse particles and/or it may be
ground to provide a fine powder. It is dark green to olive brown
in color and has a salty, characteristic taste.
The main component is alginic acid, which is discussed elsewhere.
