Colorless oily liquid. Very slightly soluble in water, soluble in alcohol and oils. Peculiar sweet-musty, fungal, Champignonlike odor. Sweet mushroom-Like, musty, “overfermented” taste.
Verwenden
Allylfumarate has been suggested for use in flavor compositions for imitation Champignon (mushroom) and other fungoid flavors.
