Thaumatin was originally discovered as a protein mixture isolated from the katemfe fruit (Thaumatococcus daniellii Bennett) in West Africa. Some proteins in the Thaumatin family are about 2000 times more potent than sugar. Although very sweet, the taste of thaumatin is obviously different from sugar. The sweetness of thaumatin is formed very slowly. Perception lasts for a long time, leaving a licorice-like aftertaste at high usage levels.
