Glyceryl Monolaurate is a monoglyceride emulsifier produced by the esterification of glycerin and lauric acid. It has a melting point of 56°c, a maximum iodine value of 0.5, and a saponification value of 200–206. In a highly purified form, it shows antimicrobial properties against microorganisms with the exception of gram-negative organisms.
